Kojira Artisan Mineral Salt is the elegant workhorse in your kitchen. It has a softer, rounder salinity than sea salt or rock salt. It brings out sweetness, richness and savoury depth in food without leaving a hard salty edge.

How to Use Kojira Artisan Mineral Salt

Some salts belong to a particular dish. This one moves through the whole kitchen. It can season from the beginning of cooking right through to the final pinch at the table.

Before cooking.
Season meat, chicken, fish or vegetables before they hit the pan, grill or oven. As the salt dissolves into surface moisture, it becomes part of the crust, juices and browned edges.

In cooking water, grains and broths.
Add it to pasta water, rice, grains, soups, broths and water for boiling potatoes or vegetables. When you season the cooking liquid, you taste the seasoning through the food rather than only on the surface afterwards.

In doughs and batters.
Use it in bread, pizza dough, flatbreads, pastry and savoury batters. When the salt is built into the dough or batter from the beginning, you taste more of the grain, butter and fermentation in the finished food.

Through sauces, butter and yoghurt.
Stir it into pan sauces, gravy, butter, yoghurt, olive oil, vinaigrettes and dips. As it dissolves, every spoonful gets the same seasoning, whether it is rich butter, tangy yoghurt or a glossy pan sauce.

At the end.
Finish eggs, tomatoes, steak, fish, roast vegetables or potatoes while they are still warm. As the crystals soften, you get little flashes of salt against the richness, sweetness and browned edges underneath.

Taste as you go.
Its salinity is softer and rounder, not weaker. Add enough to bring the food into focus, tasting as you cook.

Wood-Fired, Sun-Dried, Finished by Hand

Kojira Artisan Mineral Salt begins on our family salt fields in Isaan, Northeast Thailand, above ancient salt deposits beneath the Khorat Plateau.

For most of the year, the fields rest. Then the dry season comes. From late January to April, salt appears at the surface of the land as a pale crust. It is gathered by hand, dissolved in clay vessels and worked into concentrated salt water.

From there, fire takes over. The salt water is slowly reduced over wood fire until crystals begin to form. They are lifted by hand and dried under the Isaan sun.

At Maison Kojira, we give the finished crystals one final low roast at 130°C for 90 minutes. It drives off the remaining moisture and leaves the salt dry, crisp and ready for the kitchen.

Land. Dry season. Wood fire. Sun. Hands. This is how our everyday salt is made.

Why We Wanted to Share This Salt

Salt is one of the most ordinary ingredients in the kitchen, which is exactly why we think it deserves more attention. Once you have tasted different salts side by side and cooked with them, it becomes difficult to think of salt as interchangeable. They taste different, behave differently and change food in different ways.

We wanted this to be the jar you actually cook with every day. The one beside the stove, in pasta water and dough, over meat and vegetables, through sauces and broths, and passed around at the table.

There is nothing complicated about it. It is simply something you use constantly, made good enough that you notice the difference.
