The Founders
Maison Kojira was founded in Bangkok in 2025 by Prakay Vichapa and Jacob Spreeuwenberg, a Thai-Dutch couple with a shared passion for food, ingredients and the pleasure of eating well.
Prakay grew up in Isaan, northeastern Thailand, where her family harvests the mineral salt that became the starting point for Maison Kojira’s first collection. Her connection to the region, its ingredients and food traditions is part of the company’s origins.
Jacob has worked as a television producer and brings experience in hospitality, events and entrepreneurship. Before the couple moved to Thailand, he spent seven years in sustainable development, first as a senior business developer and later as a fund manager, working in areas including regenerative practices and sustainable food systems. His experience working with portfolio companies and evaluating their impact gave him a practical understanding of responsible production, sourcing and the importance of measurable results.
Together, the couple also built Het Massagehuys, a wellness business in Amsterdam, where hospitality, personal care and wellbeing were central to their work. That experience helped shape their shared interest in the relationship between nourishment and wellbeing, a perspective they now bring to Maison Kojira’s approach to food.

The Collection: Maximum Flavour, Naturally
Maison Kojira develops intensely flavoured gourmet salts using natural ingredients and processes that take time. Maison Kojira uses no artificial flavourings, colours or preservatives. Through ageing, fermentation and preservation, ingredients develop distinctive flavours that are then incorporated into the company’s mineral salt. The aim is to make exceptional flavour easy to bring into everyday cooking.
Kojira Artisan Mineral Salt
The foundation of the collection comes from Prakay Vichapa’s family salt fields in Isaan, northeastern Thailand. Harvested by hand, reduced over wood fire and dried under the sun, the salt contains five additional naturally occurring minerals identified through laboratory analysis.
Kojira Black Garlic Salt
Made with 28% black garlic, slowly aged for five weeks under controlled warmth and humidity. During ageing, the garlic darkens and develops a mellow, almost balsamic character, bringing deep umami and natural sweetness to savoury food.
Kojira Fermented Mushroom Salt
Each 80 g jar begins with 400 g of fresh Thai-grown shiitake, eringi and shimeji mushrooms. Fermentation and careful drying concentrate their savoury character, while the flavour-rich fermentation liquid is incorporated into the salt itself for additional flavour.
Kojira Preserved Lemon Salt
Whole lemons are preserved for at least six months, developing a deeper, rounder citrus character. The preserved peel, pulp and matured citrus brine are incorporated into the mineral salt, bringing the character of preserved lemons into a seasoning that works through sauces, dressings and cooked food.
Kojira Umami Salt Duo
The Kojira Umami Salt Duo brings together two distinct expressions of umami: Kojira Black Garlic Salt, developed through slow ageing, and Kojira Fermented Mushroom Salt, developed through fermentation. The set contains one 90 g jar and one 80 g jar, shipped together in a handmade wooden box.
Food Gifts
Maison Kojira offers gourmet salts and food gift sets for personal and corporate occasions, with optional gift wrapping.
Sourcing & Responsibility

Maison Kojira seeks to work with growers whose practices support long-term quality.
Maison Kojira sources ingredients in Thailand whenever they are grown there. All agricultural ingredients in its first collection are grown domestically. For ingredients that are not grown in Thailand, the company looks to regions where the climate and growing conditions naturally suit the crop, and where it can be cultivated sustainably.
The company also considers how its products are packaged and shipped, favouring materials such as glass, wood and paper wherever practical. Its salts are packaged in glass jars, avoiding direct contact between the food and plastic. The products are shipped in handmade wooden boxes designed to protect the glass jars during transport.
Maison Kojira has signed the Women’s Empowerment Principles (WEPs), committing to gender equality in the workplace and beyond. The company usse the SME Climate Hub framework to monitor its climate impact and progress.
