How to Use Preserved Lemon Salt
Use preserved lemon salt like salt with citrus acidity built in. When you add it determines whether the lemon becomes part of the dish or stays bright and aromatic on the surface.
Before cooking.
Season before cooking when you want the preserved lemon to become part of the finished flavour. Rub it over chicken or vegetables, or season the cavity of a whole fish before roasting or grilling. As the salt dissolves into moisture, the lemon moves into the food rather than staying only on the surface.
Through the dish.
Add it while cooking when you want the lemon to move through the whole dish. As the salt dissolves, the preserved lemon disperses into moisture, oil and cooking juices rather than remaining only on the surface.
In sauces and dressings.
Stir it into yoghurt, tahini, olive oil, vinaigrettes, butter or sauces. The salt dissolves through the mixture, carrying both salinity and preserved-lemon character with it.
At the end.
Finish food with it when you want the citrus to taste brightest and most aromatic. Add it while the food is still warm so the crystals begin to soften without losing all of their surface character.
Start with a little.
You are adding both salt and acidity at once. Taste first, then add more if the dish wants either.
What to Pair Preserved Lemon Salt With
Kojira Preserved Lemon Salt brings acidity, salt and matured citrus depth to foods that already love lemon, olive oil and fresh herbs.
Fish and shellfish.
Use it with whole roasted fish, grilled fish, scallops, prawns, sardines, octopus or shellfish. It is especially good with olive oil, butter or a little char, where the preserved lemon can cut through richness while adding more depth than fresh lemon alone.
Chicken.
Roast chicken, grilled chicken, thighs and pan juices all take it beautifully. The acidity lifts the richness of the skin and juices, while the preserved lemon adds a deeper citrus character that stays in the dish.
Yoghurt, tahini and soft cheese.
Stir it into thick yoghurt, labneh or tahini, or use it with ricotta, feta and other soft cheeses. Creamy foods soften the salt and give the preserved lemon somewhere to open, making the citrus taste fuller and more rounded.
Tomatoes and vegetables.
Try it with tomatoes, courgettes, aubergine, cauliflower, carrots, greens and roast vegetables. It works especially well where there is natural sweetness, olive oil or browned edges that benefit from a little acid.
Rice, couscous and warm grains.
Fold it through warm rice, couscous, barley or grain bowls with olive oil, herbs and vegetables. A small amount gives the whole dish more lift while adding the deeper character of preserved lemon rather than just fresh citrus.
Six-Month-Preserved Lemons
Our Preserved Lemon Salt begins with whole lemons grown outside Bangkok. We select multiple varieties for balance: enough acidity to stay bright, enough bitterness to give structure, and enough aromatic oil in the peel to remain expressive after months in salt.
We preserve the lemons for at least six months. Over time, the peel softens and turns translucent, the sharpness of fresh citrus settles, and the fruit develops deeper lemon flavour and matured complexity.
That transformation matters. Preserved lemon is still unmistakably lemon, but it becomes broader, rounder and more savoury. The brightness remains, but underneath it comes the deeper character that fresh zest or juice does not have.
That is the flavour we build into Kojira Preserved Lemon Salt.
Why We Made Kojira Preserved Lemon Salt
We love preserved lemon. Fresh zest gives brilliant citrus aroma, and lemon juice gives clean acidity, but preserved lemon brings something else: the deeper, matured citrus character that develops only with salt, juice and time.
The problem is that preserved lemon is not always easy to use spontaneously. You have to chop it, decide how much peel, pulp and brine to add, and the flavour can stay concentrated wherever those pieces land. Dried citrus seasonings solve some of that inconvenience, but they can become powdery, with much of the flavour sitting in the citrus particles rather than moving through the food.
What we wanted was preserved lemon that behaved like salt. So we work the six-month citrus brine into our mineral salt, dry the preserved peel and pulp separately, then bring them back together in an unusually high proportion.
The result is 49% preserved lemon. The aromatic peel, deeper citrus of the pulp and matured brine all move with the salt, so a pinch can travel through yoghurt, olive oil, sauces, cooking juices or warm food as easily as seasoning.
It is the preserved lemon we love, made as easy to reach for as salt.
The Mineral Salt Foundation
Kojira Preserved Lemon Salt is built on Kojira Artisan Mineral Salt, harvested from our family salt fields in Isaan, Northeast Thailand.
The salt is wood-fired, sun-dried and finished by hand. It has a softer mineral character than sea salt or classic rock salt, giving the preserved lemon room to open without making the finish harsh.
That softer salt is what lets the preserved lemon stay bright, rounded and deeply citrusy.
