How to Use Black Garlic Salt
Use black garlic salt like salt. When you add it determines where the black garlic flavour goes.
Before cooking.
Season meat 30–45 minutes before cooking, depending on the size of the cut. The salt dissolves into the surface moisture so the black garlic becomes part of the crust and juices as the meat cooks.
Through the dish.
Add it to broths, butter, pan juices, gravy or sauces. As the salt dissolves, the black garlic disperses through the dish and adds deeper umami throughout.
In sauces and dressings.
Mix a little into mayonnaise, aioli, yoghurt dressings, vinaigrettes or other sauces. It dissolves just like salt, carrying the black garlic flavour through the whole mixture. Even mayonnaise for fries becomes noticeably deeper and more savoury.
At the end.
Finish steak, eggs, mushrooms, roast vegetables or potatoes while they are still warm. The crystals soften into fat, yolk, butter and juices, leaving the black garlic flavour on the surface where you taste it most directly.

What to Pair Black Garlic Salt With
Kojira Black Garlic Salt adds dark, savoury depth to everything from steak and eggs to roast vegetables, broths and soups.
Steak, lamb and duck.
If you already have a good crust, rendered fat and juices on the plate, you are most of the way there. Black garlic salt adds dark sweetness and umami that make the whole thing taste richer and more complete. Try it on ribeye, lamb chops, duck breast, burgers or slow-cooked beef.
Eggs and mushrooms.
A small amount can do a lot here. Sprinkle it over fried or scrambled eggs, fold it into an omelette, or use it on mushrooms cooked in butter. Black garlic salt adds deeper savoury flavour without taking over what you are eating.
Potatoes and vegetables.
Roast potatoes, carrots, onions, aubergine, cauliflower and slow-roasted roots all take it beautifully. It is especially good where you have browned edges, olive oil or butter for the black garlic to melt into.
Broths and soups.
Use it when a broth tastes good but could go one level deeper. Because the salt dissolves through the liquid, the black garlic moves through the whole bowl rather than sitting on top. Mushroom broth, meat broth, noodle soups and vegetable soups are all easy places to start.
Seafood.
Try it with grilled octopus, prawns, oily fish or shellfish, particularly when there is char, browned butter or olive oil involved. You do not need much; the point is to deepen the savoury side of the seafood, not cover it up.
Five-Week-Aged Black Garlic
Our black garlic begins with small single-clove garlic bulbs and five weeks of slow ageing. Unlike standard garlic heads, which are divided into separate cloves, each bulb is one compact piece of garlic beneath its papery skin. They are slowly aged under controlled warmth and humidity until the garlic changes completely.
The raw garlic heat fades. The sulphur edge settles. The bulb turns deep black, tender, and almost jammy. Fresh garlic bite gives way to dark savoury sweetness: molasses, roasted garlic, dried fruit, tamarind, and balsamic depth.
That slow transformation matters. Black garlic is still garlic, but its flavour becomes rounder, warmer, sweeter, and more deeply savoury. It moves away from sharpness and into depth: the kind that belongs with fat, crust, browned edges, butter, juices, and roasted food.
That is the flavour we build into Kojira Black Garlic Salt.
Why We Made Kojira Black Garlic Salt
We love black garlic, but we could never use it quite as freely as we wanted. Whole black garlic cloves taste extraordinary, but the flavour tends to stay concentrated wherever the garlic lands. It can be wonderful on its own, but it does not naturally mingle through butter, sauces, pan juices or across the surface of a steak.
We tried black garlic powder too, but in our trials some of the sweetness and aroma were lost and the flavour became more bitter than the black garlic we started with. What we wanted was the flavour of good black garlic, but in a form that could move easily through food.
So we began working our five-week-aged black garlic into our mineral salt. The salt carries the black garlic wherever you use it: over eggs or steak, through butter or mayonnaise, dissolved into broth, or on meat before cooking. As the salt moves through the food, the black garlic goes with it.
The result is what we were looking for in our own kitchen: the dark sweetness, balsamic umami and savoury depth of black garlic in a form that is as easy to use as salt.
The Mineral Salt Foundation
Kojira Black Garlic Salt is built on Kojira Artisan Mineral Salt, harvested from our family salt fields in Isaan, Northeast Thailand.
The salt is wood-fired, sun-dried and finished by hand. It has a softer mineral character than sea salt or classic rock salt, giving the black garlic enough structure without making the finish harsh.
That softer salt is what lets the black garlic stay rich, savoury and rounded.
